An exclusive interview with head Chef Jolbi, who is experienced in the industry tells his story of an incredible culinary career and how he fell deep love for Japanese food. He began his culinary journey at a young age and has worked in kitchens around the world. His obsession was finally realised with the birth of Nikkei, which, for those not in the know, is an affiliation between Japanese and Peruvian culinary patrimonies. Inspired by the disciplined and orderly training of Japanese cooking, he embraced the role of an Itamae, or sushi chef. With time, he realised the potential of fusion cuisine to elevate Nikkei dishes through innovation and creative combinations. This led him to focus on crafting unique, flavour-rich experiences for his patrons.

Frank Pena: Could you share your culinary background and your experience with Japanese cuisine? Additionally, what inspired you to specialise as a chef in sushi and Japanese cooking?

Chef Jolbi Huacho: I began my culinary journey at a young age, having the privilege to cook at various restaurants around the world. Yet, staying true to my roots, I developed a deep passion for Nikkei cuisine, a unique culinary fusion born in Peru from Japanese immigration a few decades ago. I enjoy the blendof cultures, Tlavors, and techniques, particularly appreciating the curated training based on discipline and order.
When I started in Nikkei cuisine, my goal was to develop as an Itamae — sushi chef. Nevertheless, as I gained more experience, I realised that the only way to exploit my full potential as a chef was to focus on fusion cuisine. This is because through innovation and blending of Flavours and techniques, we can take Nikkei cuisine to the next level.

How do you maintain the freshness and quality of the ingredients you use? Could you provide an example of how you've incorporated customer feedback into your cooking or menu?
We maintain the freshness and quality of our products by rotating stock daily in the kitchen. One of our key principles in the restaurant is to respect the product and give it proper care, utilising our techniques and knowledge. It is always important to note the guests’ feedback, using their comments to improve and enhance their culinary experience, as it is our ultimate goal that they understand the story being told through our food presentation.

What is your approach to sustainability and responsible ingredient sourcing? How does the restaurant maintain high standards of cleanliness and food safety?
We use each product to its fullest, maximising the complete raw material. At the same time, we reduce wastage through a work plan based on organisation, product handling, communication, and good practice of hygiene. We also focus on keeping constant communication with suppliers to ensure that the products are in optimal conditions to take advantage of them one hundred percent.
Additionally, we educate our staff about restaurant safety and standards by ensuring their training through Dubai Municipality approved food safety institution. Also, we monitor the implementation of the training by observing and guiding them daily so as to maintain a proactive approach to our commitment of food safety and cleanliness.

How do you go about developing menus and creating new dishes? What training and development opportunities does Sushiyaki Dubai offer its culinary staff?
Sushiyaki is a modern Japanese cuisine, we develop the menu by preserving the essence of concept while using cutting edge techniques that allows us to play with a variety of ingredients. Our chefs constantly rotate through various areas in the kitchen, enabling them to train, develop their skills, and retain their cooking techniques.

How would you describe the dining experience and atmosphere at Sushiyaki Dubai, and what can customers expect in terms of food, ambiance, and service?
At Sushiyaki Dubai, the dining experience is an exquisite fusion of Japanese culinary artistry with a hint of Peruvian inspiration, creating a unique and unforgettable gastronomic adventure.
